Biographie de l'auteur :
NORMAN MUSA is the UK & Europe s leading Malaysian chef and a passionate ambassador for Malaysian cuisine. He is Executive Chef and co-founder of Ning. He is also a TV personality, author, teacher and entrepreneur. He is one of the most exciting and engaging up-and-coming chefs in the UK, passionately promoting his native Malaysian cuisine. With over 60,000 Facebook fans and appearances on MasterChef Malaysia, Chef Norman has achieved much since opening his first Ning restaurant & cookery school in Manchester in 2006, with a branch in York and a supper club in London. He was chef for the Malaysian Formula One team in 2010, finalist for Malaysia s National Outstanding Achievement Awards in 2011 and is currently the UK s Young Asian & Oriental Chef of the Year. He has launched his own range of food products and is planning a third cookbook. Born in Penang, the food capital of Malaysia, he has achieved much in just 6 years as a professional chef. In 2012 he was awarded Young Asian & Oriental Chef of the Year at the Asian Curry Awards, along with his Manchester restaurant as Best Malaysian Restaurant, and entered into the Hospitality Guild's prestigious Young Hall of Fame. He was also a finalist in the 1st Malaysia National Achievement Awards for outstanding achievement in his field. He frequently runs master classes, cooking demonstrations and pop-up cookery schools at many of the UK & Ireland's top foodie events. Engaging and enterprising, Norman is interactive in his approach and entrepreneurial in his outlook. In 2012 he launched his own Malaysian spiced range of handmade chocolate bars, and is working on other products for 2013/14. He has hosted his own TV cooking series and featured more than once on MasterChef Malaysia. He is former race chef for the Lotus Racing (now Caterham) F1 team and has been recognised by Prestige Magazine as one of Malaysia's 'Top 40 Under 40'. Chef Norman is also a past finalist for Manchester s Chef of the Year, along with Ning as Restaurant of the Year. Self-taught and mentored by his late mother, Norman has featured extensively in the British and Malaysian press, on TV and at food festivals, written his own sell-out books, caters for VIP events and regularly leads Malaysian cookery classes. His ambition is to make Malaysian food big in the UK - at least on par with the popularity of Indian, Chinese & Thai cuisine - and in so doing to be the Malaysian face of Malaysian food.

Malaysian food is the unsung hero of Far Eastern cuisine, rich in flavour and diversity as developed over centuries of cultural heritage. Now in the 21st Century, it is high time someone sung its praises around the world. Here, critically acclaimed UK-based Chef Norman Musa reveals his secrets and passion for his native cuisine. Inspired by his Mum, multi-talented Norman provides insights into authentic Malay home cooking, drawing on his own village (kampung) upbringing, his childhood favourites and own restaurant creations. Food is what brings Malaysians together. Full of recipes and the stories behind them, this book is a vibrant, highly personal journey through the culinary delights of Malay cooking. This third edition brings the story of Chef Norman up to date, introduces new photography and reveals 8 new recipes from his master classes. Excellent cookery book for beginners and experts alike - Time Out A lovely book - Rick Stein A hit with Britons keen to whip up Malaysia s exotic dishes - The Star (Malaysia) A unique book that introduces the world's most exciting fusion cuisine in a most engaging way. The book is much more than a collection of recipes; it contains entertaining anecdotes, personal insights and informative guides from his upbringing and passion for Malaysian food. Stunningly illustrated with on-location photographs, its colourful 212 pages also contain useful sections on Malaysian culture, history, people, places & ingredients. It's a really super looking book - great colours, great photography. I enjoyed the opening sections looking at culture and ingredients in a bit of depth, before getting on to the recipes. - Veronica Leek, cookery book buyer for Foyles I was most attracted to the apparent authenticity of the Ning cookbook. I really have enjoyed reading through the book, the photos and anecdotes are fantastic in conveying the atmosphere. - Rima Haque, Amazon customer
