From Booklist: This second edition of the Junior Worldmark Encyclopedia of Foods and Recipes of the World features full-color photos and has expanded to be more comprehensive and representative of the world’s culture groups. The four-volume set includes 75 alphabetically arranged entries covering 64 countries. Large, ethnically diverse nations such as the U.S., Brazil, Canada, Australia, and the UK have been assigned ethnic subgroups and regions to more fully represent their populations. Readers will find that this is more than just a cookbook; each country’s profile includes information in seven groups: “Geographic Setting and Environment”; “History and Food”; “Foods of the Country or Culture”; “Food for Religious and Holiday Celebrations”; “Mealtime Customs”; “Politics, Economics, and Nutrition”; and “Further Study.” Clearly written entries enable the set to take the place of many stand-alone titles, which often deliver far less background information than readers may be seeking. The dozen recipes included for each group are attractively photographed, if not fully up to today’s Internet food-aficionado standards. Each volume also includes a full glossary of ingredients and cooking terms, plus U.S. and metric conversions and basic cooking techniques. Care has been taken to identify recipes that will require an adult’s help or supervision as well as to recommend alternate ingredients when the list gets more complicated than the average American supermarket can support. Like many reference titles written for elementary- and middle-school students, this title does not include entries for every country but must rely on some of the larger areas to support their smaller neighbors. For example, Sweden stands in for all of Scandinavia, and South America features only Argentina, Brazil, Chile, and Peru. Despite that shortcoming, this is a strong choice, especially appealing for smaller libraries that struggle to flesh out their collections without saddling themselves with rarely circulating titles for every possible country.
