L'auteur de cette monographie, une des premières sur le maïs, remarque dès son avant-propos que l'ouvrage de Parmentier n'avait pas traité le maïs au point du vue médical. Il révèle que c'est le général Lamarque qui « en parcourant les champs qui environnent Saint-Sever a remarqué la santé florissante dont jouissent les hommes qui font du maïs leur principal aliment. Il s'est demandé pourquoi les médecins négligeaient l'emploi d'une nourriture qui lui paraissait si salutaire ». Dans le corps de sa thèse, l'auteur donne des recettes culinaires de France, d'Italie et des États-Unis notamment en Louisiane.
