Vicaire 77 , Cagle 1182, Oberle 75 (the 1605 ed.), Bitting 419 (though with a few different paginations for the 1570 edition) A largely complete first edition (though priority has proved hard to establish between the 1570 editions) of the greatest cookery treatise of the Renaissance. Not until La Varenne's Cuisinier Française in 1651 would a work of even roughly comparable culinary importance be published (and that is ignoringf the remarkable engravings - including the first fork ever pictured ). Scappi describes the method and implements of a new sort of cookery. Though sprung from and describing elaborate banquets of mind-boggling complexity (one banquet that he describes has 159 dishes), the individual recipes were suitable for middle class tables, and remain fully recognizable as staples of Mediterranean cuisine. Il Trinciante is likewise a first edition and represents the most important and influential Renaissance treatise on carving. It was often bound with later editions of Scappi's Opera. L opera è costituita da sei libri, nel primo dei quali l autore istruisce innanzi tutto un giovane discepolo, seguono le istruzioni per la scelta delle materia prime, quelle sulla cura dei locali sei libri; nel secondo sono descritti i tipi di carne e le tecniche per la loro cot- tura; nel terzo le stesse indicazioni sono date per i pesci; il quarto riguarda i menù, la scelta delle vivande secondo le stagioni; il quinto è dedicato ai dolci, crostate, torte, pasticci, etc.; il sesto e ultimo è infine dedicato al vitto per malati e convalescenti. Egli nacque a Bologna o più probabilmente in Veneto, come sostengono alcuni studiosi per via dell inflessione dialettale della sua prosa. Da alcuni cenni biografici presenti nel trattato si apprende che nel 1536 si trovava a Roma con il compito di allestire, per conto del cardinale Lorenzo Campeggi, il banchetto di benvenuto per l arrivo in città dell imperatore Carlo V. Nel 1542 organizzò invece il convito che il cardinale Marin Grimani diede a Venezia in occasione della visita di Ranuccio Farnese. Scappi fu attivo in varie città italiane, ma lavorò prevalentemente a Roma, al servizio dei cardinali Pietro Bembo, Rodolfo Pio di Carpi e Jacopo Sadoleto. L ultimo suo banchetto attestato è quello che preparò nel 1566 per celebrare l anniversario dell elezione di Pio V. Egli morì probabilmente poco prima o poco dopo la pubblicazione del suo trattato. . Nei ff. preliminari: privilegio di Pio V, dedica "a Don Franc. di Reinoso scalco e cameriero secreto" e dedica ai Lettori. Stupendamente illustrato con ritratto inciso in rame dell'autore e da 27 artistiche tavole a piena pag. f.t. in silografia (una su doppia pag. delinea con ricchezza di particolari il cerimoniale del servizio di mensa nel Conclave dell'inverno 1549-50): esse offrono una straordinaria documentazione degli arnesi e dei lavori di cucina e rivelano la progredita tecnologia e l'armamentario di una tra le officine gastronomiche principesche del tardo Rinascimento italiano. "Il trattato, ch'è il più ampio e completo fra quanti ne vennero elaborati nel "500, ha il carattere di una summa sistematica, frutto di innumerevoli esperienze codificate e filtrate da una rielaborazione unitaria ad opera di un redattore lucido, asciutto, efficiente, che usa un linguaggio tecnico altamente specializzato." Stupendamente illustrato con ritratto inciso in rame dell'autore e da 27 artistiche tavole a piena pag. f.t. in silografia (una su doppia pag. delinea con ricchezza di particolari il cerimoniale del servizio di mensa nel Conclave dell'inverno 1549-50): esse offrono una straordinaria documentazione degli arnesi e dei lavori di cucina e rivelano la progredita tecnologia e l'armamentario di una tra le officine gastronomiche principesche del tardo Rinascimento italiano. "Il trattato, ch'è il più ampio e completo fra quanti ne vennero elaborati nel ?500, ha il carattere di una summa sistematica, frutto di innumerevoli esperienze codificate e filtrate da una rielaborazione unitaria ad opera di un redattore lucido, asciutto, efficiente, che usa un linguaggio tecnico altamente specializzato."
