The author begins by highlighting the history of milk cleanliness, from early efforts to remove foreign particles to the development of modern mechanical milk clarifiers. Different methods for determining the dirt content of milk are discussed, including sedimentation, filtration, and centrifugal force. The author then presents the results of a study on the germ content of milk from cows in three different barns, finding that the amount of dirt entering the milk increased the germ count by approximately 500 per cubic centimeter. A subsequent study involving extremely dirty cows revealed that dirt could increase the germ count by up to 17,000 per cubic centimeter. Finally, the author examines the germ content of the dirt itself, finding that it contains billions of germs per gram.
