The book situates this work against the backdrop of contemporaneous scientific research in the United States as well as in the United Kingdom. It argues that this research was essential to improving canning as a means of food preservation, ultimately benefiting the military during World War I and civilians alike. The author also details some of the challenges in implementing the research's findings in the canning industry, slowed down by a lack of universal standards and resistance to sharing trade secrets among canners. Nevertheless, the research was novel and arose out of a need for consistent scientific study of the canning process. At the time, this work was seen as a major breakthrough in the field of food preservation, which was previously hampered by inconsistent scientific research.
