Prior to the author's work, virtually nothing was known about the subject. The author's investigations reveal that corn kernels are rich in several distinct globulins, or proteins soluble in salt solutions but not in water. Through a series of experiments, the author managed to separate these globulins, most of which belong to the families of either myosin or vitellin. The author concludes that the complex mixture of globulins in corn contributes to the nutritional and industrial value of this essential grain.
