SUSAN SYKES HENDEE is a chef and has served as director of the foods program at New York University's Department of Nutrition, Food and Hotel Management and also as a chef instructor at Johnson & Wales University. In addition to her AOS degree in culinary arts from the Culinary Institute of America, she has earned both a bachelor's of science degree in food service education and a master's of science degree in computer education from Johnson & Wales, as well as a master's of arts degree in food service management and a PhD in foods and food management from NYU. She has also played a key role in the field with her research in computerizing the foodservice industry. She is currently Dean of Graduate and Academic Studies at Baltimore International College. MOHAMMAD AL-UBAYDLI is a doctor and programmer who uses IT to improve healthcare. He is the author of Handheld Computers for Doctors, also published by Wiley.
