HELEN GUSTAFSON is the tea sommelier for Chez Panisse and writes a weekly column on tea for the San Francisco Examiner. Helen was chosen to write the tea entry in the latest edition of The Joy of Cooking, and she has written for Gourmet, Mirabella, Self, The Tea Quarterly, Petite Propos Culinaire, and other magazines. She lives in Berkeley, California.
