Quatrième de couverture

Indian food is like music: a symphony of taste. Each dish has its own intricate beats and rhythm, like the strumming of a sitar, as the flavours hit the palate.
Our love affair with spices has a long and noble tradition, and Indian cuisine enjoys a very special place in our hearts. Sadly, all too often, this love is not translated into our kitchens and on to our tables at home. But within this book, restaurateur and TV chef Reza Mahammad offers the home cook a fresh insight into cooking with spices. Through his marvellous recipes we can create dishes that are brimful of aromatic intensity. Consider Spiced Mussels in Tamarind Broth, Lamb with Fenugreek, Cashews in a Rich Coconut Sauce - food that sings with flavour, offering mouthwatering textures and colours. Create these dishes and an intoxicating blend of aromas and tastes will fill your kitchen, evoking the very feel and flavour of the Orient.

‘Raw foodism is a lifestyle choice that many believe brings body, mind and spirit back in tune with Mother Nature. For raw Indian, think raitas and fresh beansprout and cucumber salad, lassie and carrot halva. It’s only a matter of time before we say sayonara to the vindaloo and welcome to maca nut raita’ ‘The Next Big Thing’, ES Magazine 2/11
