Anthony and Stephanie are two of the world experts in lactose and food intolerance. Anthony is a biochemist with an international reputation for his work on lactose intolerance, how cells are regulated by calcium inside them, and the development of bioluminescence in biomedical research and clinical diagnosis. One of his inventions, replacing radioactivity by a chemical reaction that makes light, is now used in several hundred clinical tests world-wide, was award the Queen's anniversary prize in 1998, and was selected by the Eureka project of Universities UK in 2006 as one of the 100 most important discoveries and inventions from UK Universities in the past 50 years. Anthony was born in Bangor, North Wales, but grew up in London. He obtained an exhibition at Pembroke College, Cambridge in 1994 to read Natural Science at Cambridge University, obtaining a first class degree and then a PhD in Biochemistry. He moved to Cardiff as a lecturer in 1970, becoming Professor in Medical Biochemistry in 1991, and is now Professor in the School of Pharmacy and Pharmaceutical Sciences, at Cardiff University. He has pioneered and experimental strategy to light up chemical processes in live cells using genetically engineered bioluminescent proteins. He has published over 250 scientific papers, and 10 books, including 'Intracellular calcium', 'Chemiluminescence: principles and applications in biology and medicine' and 'Rubicon: the fifth dimension of biology'. He believes passionately in communicating science to a wider public, and in exciting young people about curiosity in Nature. He founded the Public Understanding of Science (PUSH) group in the Medical School at Cardiff University and the Darwin Centre for Biology and Medicine in 1994, which is now based in Pembrokeshire where it has had a major impact on science education. He is an expert in Charles and Erasmus Darwin, and Alfred Russel Wallace, giving regular lectures to schools and the public. He has given many TV and radio interviews, and founded the Pembrokeshire Darwin Science Festival in 1999. He was elected a Fellow of the Linnean Society in 1994, a foreign member of the Royal Swedish Academy of Sciences, Uppsala in 2000, and a Fellow of the Learned Society of Wales in 2012. He is a passionate naturalist and musician, and now makes music in the kitchen, He is also an avid bridge player. Anthony is married to Stephanie and has five amazing children, two of whom had their lives transformed by the discovery that they too were lactose intolerant. Stephanie is an expert in the clinical management of lactose and food intolerance. She studied medicine at the then Welsh National School of Medicine, in Cardiff, qualifying in 1978, and becoming a consultant in Medical Biochemistry in the NHS in 1988. She ran a clinic for people with high cholesterol, and set up the first food intolerance clinic in Wales. The discovery of her own lactose intolerance has changed her life in more ways than one. Stephanie believes in the need to communicate effectively with people if they are to be able to take ownership of their own health. She practiced this successfully in her own clinics for over 20 years. She has also mentored school pupils (10-18 years old) in science projects with the Darwin Centre, of which she is a founding Director, was President of the Association for Science Education in Wales in 2000, and became a Fellow of the Royal College of Pathology in 1998. With Anthony she has pioneered a science theatre project called 'Not the nine o'clock clinic', which has changed the way children with high blood cholesterol are managed. She was short listed for Hospital Doctor of the Year in 2003.

This is an excellent book for anyone who thinks they may be lactose intolerant. Not only does it provide you with over 100 excellent recipes but the writers who are a husband and wife team (and are 'real' experts in the field) go into some detail about the science of it all. Tony (Professor Anthony Campbel MA PhD FLS FRSA - Professor in Medical Biochemistry at the Wales college of Medicine, Cardiff) and Stehpanie (Dr Stephanie Matthews MB BCh PhD FRCPath - who's speciality is Medical Biochemistry (which is the chemistry of how the body works)) have been working for many years trying to figure out the effects of lactose intolerance and why it effects so many people - they have done some fantastic research, and even found that some things like ;100% orange juice from concentrate has had lactose added to it!! (This is especially true of some the cheaper/own brands - the law currently stipulates that ingredients less than 25% of the whole do no need to be disclosed!!). And did you know that Edam cheese actually has quite a low lactose count? Fascinating stuff! Stephanie and their daughters are themselves lactose intolerant so it is a subject very close to their hearts. Stephanie also teamed up with a geneticist, and helped formulate a clinical test - which she used in her lactose intolerance clinic at Llandough Hospital in Cardiff. The test could be used to see if you are or are not lactose intolerant - there are only 2 clinics in the whole of the UK who have been known to offer this test (it's a DNA test). Anyway, I can't stress enough that this is a must-buy for anyone who thinks they are lactose intolerant, and while there could be more recipes, the ones that are there give you a good start - but the real gem of this book is the fact that it is based on real science and the invaluable information contained will probably not be found in other books, hence why I feel it should be the primary purchase for everyone who is (or thinks they may be) lactose intolerant. How do I know so much about the writers? For one I have the book :-) and two, I was a patient at Stephanie's Lactose Intolerance Clinic in Llandough Hospital - I found her to be a very honest and caring person, who helped me deal with my own lactose intolerance. While I was already clued up about lactose intolerance (having spent thousands on 'alternative therapists') Stephanie helped by being able to give me a definite yes/no about what was 'wrong' with me (the DNA test), and by informing me about the science of it all and opening my eyes to why the laws around food manufacturing need to change so that there is a 100% disclosure on ingredients lists. This is very important to those of us who are lactose intolerant because 'lactose' is added to so many 'foods' simply because it acts not only as a preservative, but a sweetener too.
