Slow Cooker No-Fuss Goulash
There’s enough time while the goulash is thickening to cook egg noodles, the traditional partner for this saucy dish. We recommend sweet Hungarian paprika.
2 onions, sliced
2 cloves garlic, minced
2 lb (1kg) stewing beef cubes
½ cup (125 mL) chili sauce
2 tbsp (25 mL) packed brown sugar
2 tbsp (25 mL) Worcestershire sauce
1 tbsp (15 mL) sweet paprika
1 tsp (5 mL) dried marjoram
½ tsp (2 mL) each dry mustard and salt
¼ tsp (1 mL) pepper
3 tbsp (50 mL) all-purpose flour
Place onions and garlic in slow cooker. Trim and cut beef into 1-inch (2.5 cm) cubes; place on onions.
Combine 1 cup (250 mL) water, chili sauce, brown sugar, Worcestershire sauce, paprika, marjoram, mustard, salt and pepper; pour into slow cooker. Cover and cook on low for 8 to 10 hours or until meat is tender.
Whisk flour with ¼ cup (50 mL) water; whisk into slow cooker. Cover and cook on high for 10 to 15 minutes or until thickened.
Makes 4 servings. PER SERVING: about 480 cal, 54g pro, 17g total fat (6g sat. fat), 27g carb, 3g fibre, 111mg chol, 975mg sodium. %RDI: 5% calcium, 44% iron, 13% vit A, 15% vit C, 15% folate.
