I've been baking since I was a kid and writing professionally for 30+ years. I figured it was time to combine the two! As a kid, I made cakes top-heavy with icing and brownies that burned on the bottom. But I kept at it, and pretty soon I’d mastered it. Later, I moved to a small farm and perfected bread-making and working with more natural ingredients. Then came the issues with gluten and cholesterol. As a good baker, though, I felt up to the challenge. Okay, my first attempts at muffins and cakes were flat, flabby, and boring. And tasted gummy. With a little finagling and patience, though, I overcame those obstacles and made light and fluffy gluten-free, low-cholesterol goodies. Yeah, well, every silver lining has a cloud. I wondered why my waistband was pinching more and more every year. When I took a good look at the GF ingredients I was using—and the ingredients in store-bought gluten-free products—I realized they were loaded with empty calories and carbs in ingredients such as potato starch, tapioca starch, white rice flour, and so on. But without all those lightweight ingredients, gluten-free baking can be tough—literally and figuratively. Muffins or rolls could fail to rise and end up gummy in the middle. Ugh!
