This book starts by giving the reader an overview of the historic structures of food manufacturing standards and how they defined today’s manufacturing. It is followed by a topical introduction for professionals in the food industries in topics such as AI, machine learning, and neural networks. It also includes an explanation of the different sensor systems and their basic principles. It shows how these sensing and computing systems are suitable for process implementation in food factories and what types of sensing systems have already been proven to deliver benefit to the food manufacturing industries. The authors also discuss issues around food safety, labelling, and traceability and how sensing and AI can help to resolve issues. They also use case studies and specific examples that can show the benefit of such technologies compared to current approaches.

Daniel Hefft is a food engineer from Germany. He received his undergraduate degree from Technische Hochschule Ostwestfalen-Lippe with specialization in cereal technology. He has a master's degree from the University of Reading and is currently at the University of Birmingham. He has been awarded research fellowships and research affiliation with the University of Birmingham. He has extensive years of experience in the food industry, having worked for a range of companies. His specialties are foodprocess design and engineering. He is the founder and past CTO of Rheality Ltd., which utilizes a novel technology based on acoustic sensing and machine learning for rheology measurements. Daniel is also the founder of the Engineering for Food and Drinks Special Interest Group at the Institution of Agricultural Engineers and its current chair. Since 2018 he has gained professional recognition as a chartered engineer with the Institution of Agricultural Engineers. He is further involved in the Association of German Food Technologists (GDL e.V.) and the Institute of Physics (IOP).
Charles Oluwaseun Adetunji is presently a faculty member at the Microbiology Department, Faculty of Sciences, Edo State University Uzairue (EDSU), Edo State, Nigeria, where he utilized the application of biological techniques and microbial bioprocesses for the actualization of sustainable development goals and agrarian revolution, through quality teaching, research, and community development. He was formerly the Acting Director of Intellectual Property and Technology Transfer, the Head of Department of Microbiology, Sub Dean for Faculty of Science and currently the Chairman Grant Committee and the Ag Dean for Faculty of Science, at EDSU. He is a Visiting Professor and the Executive Director for the Center of Biotechnology, Precious Cornerstone University, Ibadan, as well as a visiting scientist to the Department of Biotechnology and Food Science, Durban, South Africa. He is presently an external examiner to many academic institutions around the globe most especially for PhD and MSc students. He has won several scientific awards and grants from renowned academic bodies such as Council of Scientific and Industrial Research (CSIR), India; Department of Biotechnology (DBT), India; The World Academy of Science (TWAS), Italy; Netherlands Fellowship Programme (NPF), Netherlands; The Agency for International Development Cooperation, Israel; Royal Academy of Engineering, UK. He has published many scientific journal articles and conference proceedings in refereed national and international journals with over 450 manuscripts and 4 scientific patents. He was ranked recently as number 20 among the top 500 prolific authors in Nigeria between 2019 till date by SciVal/SCOPUS. His research interests include Microbiology, Biotechnology, Post-harvest management, Food Science, Bioinformatics, and Nanotechnology. He was also recently appointed as the President and Chairman Governing Council of the Nigerian Bioinformatics and Genomics Network Society. He was recently appointed as the Director for International Affiliation and Training Centre for Environmental and Public Health, Research and Development, Zaria. He is presently a series editor with Wiley and Sons, Elsevier, Taylor and Francis, USA, editing several textbooks on Agricultural Biotechnology, Nanotechnology, Pharmafoods, and Environmental Sciences. He is an editorial board member of many international journals and serves as a reviewer to many doubleblind peer review journals published by Elsevier, Springer, Taylor and Francis, Wiley, PLOS One, Nature, American Chemistry Society, Bentham Science Publishers etc. He is a member of many scientific and professional bodies including American Society for Microbiology, Biotechnology Society of Nigeria, and Nigerian Society for Microbiology, and is presently the General/Executive Secretary of Nigerian Young Academy. He is the National coordinator for South-West Nigerian Society for Microbiology. He has won a lot of international recognition and also acted as a keynote speaker delivering invited talk/position paper at various universities, research institutes, and several centers of excellence that span across several continents of the globe. He has over the last fifteen years built strong working collaborations with reputable research groups in numerous and leading universities across the globe. He is the convener for Recent Advances in Biotechnology, which is an annual international conference where renown microbiologists and biotechnologists come together to share their latest discoveries. He is the president and founder of the Nigerian Post-Harvest and Food Biotechnology Society.
