Put joint in an abundance of cold water. Bring slowly to boiling point and cook slowly 4 or 5 hours. About 1 hour before serving add onion sliced, salt and pepper and about 25 minutes before serving add celery and orange peel. When ready to serve strain and serve boiling hot in cups.
