This book explores the world of alcoholometry, the science of measuring the amount of alcohol present in a liquid. The author begins by explaining the basic principles of alcoholometry, and then provides detailed instructions on how to use a variety of methods to measure alcohol content. The book also includes tables of alcohol content for various mixtures of water and alcohol, and a discussion of the legal and commercial implications of alcoholometry. This book is an essential resource for anyone who works with alcohol, whether in the beverage industry, the scientific community, or law enforcement. It is also a valuable reference for anyone who is interested in learning more about the fascinating world of alcoholic beverages.

The accompanying tables were compiled under my direction by Mr. T. J. Cheater and Mr. John Holmes, of the Government Laboratory, and were originally published in an abbreviated form in connexion with the article A lcoholometry, contributed by Mr. Holmes to AD ictionary of Applied Chemistry (L ongmans, Green Co., London). They have now been extended so as to make them more convenient in practical application. The following general observations on alcoholometry, together with the explanation of the origin and use of the tables, are taken from the article above referred to. When alcohol and water are mixed together the volume of the mixture is invariably less than the sum of the initial volumes, and the degree of contraction varies with the proportion of alcohol present. In countries in which the revenue from spirit is of great importance it has therefore been found necessary to ascertain by experiment the specific gravities of mixtures of alcohol and water in all proportions and at various temperatures. These experiments have in general been carried out at the request of the governments interested, and the results are embodied in tables associated with the names of those entrusted with the investigations.
