This book analyzes the results of a study conducted by the United States Department of Agriculture to compare the quality of Jonathan and Red Delicious apples stored in field boxes or prepackaged in film bags within corrugated shipping containers. The author stored the apples at 32° and 40° F and examined them after 1, 2, and 3 months of storage, as well as after an additional 7 days at 70° F to simulate a marketing period without refrigeration. Ultimately, the author found that apples stored in either field boxes or prepackaged in film bags showed little difference in quality over a 3-month storage period, provided the film bags were perforated to allow for air circulation. Notable deterioration in both storage types included the development of decay, internal breakdown, and scald, all of which were most prevalent in apples that were initially more mature at harvest. Prepackaged storage was found to have some advantages over field box storage, including a reduction in weight loss and shriveling, both of which can affect marketability and consumer appeal.
