Paperback. Etat : New. Print on Demand. This book, written by the author of a maple sugar study in 1865, studies the history, and techniques of maple sugar production in North America. The book was written during a period of rapid expansion and increasing popularity of maple sugar and syrup as a foodstuff due to the introduction of new techniques which led to the mechanization of the boiling process. The author details how the maple sugar industry grew in the early 1800s before stagnating at the end of the 19th century. This stagnation was due, in part, to the introduction of granulated sugar, which was cheaper and easier to refine than maple sugar. The author examines the sugar making process in depth, from the tapping of the tree, to the boiling of the sap, and the crystallization of the sugar. The author includes illustrations and tables to help explain the tools and techniques of maple sugar production. The author stresses the importance of a well-managed maple grove to the sustained production of maple sugar, and he includes guidance for grove management. The author also covers the environmental impacts of maple sugaring.
