The author draws upon controlled experiments conducted in Cleveland, Ohio, and Philadelphia, Pennsylvania across three separate years. During these experiments, consumers were given a choice of color-added oranges, natural-color oranges, or a combination of the two. The results of these experiments suggest that sales of color-added oranges were consistently higher in Cleveland, while sales of natural-color oranges and combinations of both types were about equal in Philadelphia. The author suggests that these differences may be due to the fact that consumers in Cleveland were less familiar with natural-color oranges than consumers in Philadelphia. The book also explores the opinions of consumers who purchased either color-added or natural-color oranges, and finds that while most consumers were aware that color was sometimes added to oranges, they were not generally opposed to the practice.
