He has a way of making ingredients that would normally not be thought of in the ways he describes blend smoothly, and he wants everyone to be as comfortable with them as he is. He has 96 recipes in this first book of a planned 3 for menus, he also goes into the history of ingredients as well so that you know when they where used in the culinary world.
