Some of the ingredients used with the recipes in this book are original. To attain the authenticity of the style and flavor of the Philippines cuisine, some ingredients were substituted, omitted, or added. Because of the availability of the ingredients one item was replaced with another which is close in appearance and flavor. For the kare-kare, instead of using banana blossoms, I have used artichoke. The artichoke had a better appearance in presentation of the dish and also has a flavor and texture close to banana blossoms. This is very appealing and appetizing to a Western palate. Although some tropical fruits and vegetables are now available in North America, the market is still scarce. Big cities with high concentrations of Filipinos have businesses selling commodities such as fruit and vegetables. They have exotic vegetables like bitter melons, taro roots, purple rice as well as preserved fruits. Other ethnic communities also sell some tropical vegetable. Some of these vegetables are from Asia, ans some are grown and raised in Southern California, Florida and Central America. A selection of vegetable recipes were prepared and are highly recommended for health conscious and vegetarians. -Albert J. Moritz The ingredients used in the recipes are generally available in neighborhood stores.
