Synopsis

This anthology of information on making and using cider and perry in the British Isles prior to 1700 CE has been curated from over 120 texts. Focusing on information detailing the making and use of these drinks, the selected (and newly translated where required) historical sources present, in their centuries-old words, information on: apple and pear varieties used, harvesting, storage (hoarding), crushing/milling, pressing juice, fermentation, fermentation conditions and containers, aging, bottling, and correction of faults. Additional topics include: flavor additions to cider and perry (including spices, other fruit juices, etc.), the importance of the previous contents of barrels, economic data, production rates, and perceived health effects of the drinks. The sources range from early mentions of cider/perry in legal and economic records to detailed texts providing extensive instructions for making cider and perry. Other sources include social commentary and compare cider and perry to alternative drinks. Primary and selected secondary sources are included, all fully referenced. Brief contextual information is provided for each source. This volume, while not a cohesive history or modern instruction manual for brewing, provides a window into the early history of these enduringly popular drinks for those interested in history, historical foodways, cider and perry brewing, and historical brewing.

Trained in Chemical Engineering and Biology at MIT and Civil/Environmental Engineering at Northeastern University, Laura Angotti has been brewing and studying historical brewing for over 25 years. Her focus is early brewing - anything less than 300 years old is probably not old enough. Laura’s primary interests are recipes and instructions to recreate historical drinks and inspire modern brewers (with as much or as little adaptation for modern knowledge as the brewer desires), and developing insights into the lives and achievements of brewers and peoples long past to feed her conviction of the interconnectivity of all things. This research regularly draws on her professional experience in techno-economic analysis/modeling, industrial fermentation, and water treatment to connect the past with the present. While Laura remains focused on mead - beer, wine, distilled drinks, cider, and perry are not ignored. Her search for historical documents about brewing began, not coincidentally, about the time she met her husband, who found the almost 2000 microfilm reels of Early English Books in Northeastern University’s library, and may have regretted telling her about it ever since. Her husband remains involved in her endeavors as a talented brewer and taster.
