Professor Keith W. Waldron is a Senior Scientist at the internationally renowned Institute of Food Research, UK where he is head of the Sustainability of the Food Chain Exploitation Platform . He has published widely in the field of plant cell walls and was awarded the coveted Open University Ray Nelson Prize in 2001.
