Donatien Grau est l'auteur de plusieurs ouvrages de recherche en histoire, histoire de la littérature et histoire de l'art. Conseiller d'Azzedine Alaïa pour La Galerie, espace à but non lucratif du couturier, de 2014 au départ de celui-ci, il est à ce titre responsable de la programmation des expositions, ainsi que des publications attenantes. Son ouvrage Dans la bibliothèque de la vie (Grasset, 2019) est dédié à Azzedine Alaïa. Il a publié Prendre le temps (Actes Sud, 2020), recueil de conversations menées par Azzedine Alaïa sur le thème de la création artistique.
