PRODUCTION TECHNOLOGY OF RAISINS FROM GRAPES: Consumer demand is constantly on the rise for better and more nutritious fruit products, from traditional process to new, high value-added products such as fruit raisins. this changing market preference reinforces the importance of study and research on raw fruit material in the food industry, and consequently the relevance of several processing technologies used for raisins production. Raisin is one of the important processed product obtained from grapes. Raisins are prepared mainly from seedless grapes. In India both seedless and seeded varieties are used for raisin making. The Seeded raisins called as ‘Manuka’ are used for their therapeutic value; while seedless raisins known as ‘Kishmish’ are used at festive occasions both religious and social. However, the complex nature of fruits and its biological properties continues to pose a major challenge for process engineers. Production Technology of Raisins from Grapes provides an engineering perspective on raisin processing.

(Food Processing Technology) from AAU, ANAND(INDIA).He is having industrial research experience as a process innovation & application design engineer in food and dairy sector.
