Ce livre étudie les effets du glycérol alimentaire sur le rendement en protéines du lait. Douze vaches laitières multipares en lactation ont été affectées à un régime alimentaire dans un design carré latin répété 3 x 3. Les régimes étaient un régime basal à 70 % fourrager, le régime basal avec du maïs moulu et riche en humidité remplaçant les fourrages, et le régime basal avec du glycérol raffiné. Les régimes ont été nourris pendant 28 jours et des échantillons de lait, d'aliments et de sang ont été prélevés. L'apport en matière sèche et la production de lait ont été stimulés dans les régimes de traitement. Les rendements en protéines du lait ont été stimulés par le maïs et stimulés par le glycérol. À l'exception des acides aminés à chaîne ramifiée, qui ont été significativement déprimés en réponse au traitement au glycérol, les concentrations plasmatiques d'acides aminés non essentiels et d'acides aminés essentiels n'ont pas été affectées par les traitements alimentaires.
