Il est donc nécessaire d'appliquer une technologie post-récolte appropriée pour prolonger la durée de conservation du piment vert. Le temps de séchage, le rapport de déshydratation, le carotène, la chlorophylle et la couleur ont été pris comme variables dépendantes dans l'étude. L'humidité du piment vert frais variait de 523,17 à 871,31 % (d. b.) tandis que la teneur en humidité du piment vert séché était de l'ordre de 44,48 à 5,38 % (d. b.). Temps de séchage total compris entre 150 et 240 min. La teneur en carotène varie de 0,138 à 0,377 mg/100 g. la chlorophylle-a et la chlorophylle-b variaient de 14,22 à 39,83 mg/100 g et de 6,18 à 27,91 mg/100 g respectivement. Le niveau optimal de variables indépendantes pour le séchage du piment vert a été obtenu en utilisant l'optimisation simultanée de réponses multiples. temps de séchage, carotène, chlorophylle-a, chlorophylle-b, L*, a* et b* étaient : température de 600 °C et taille de l'échantillon de 150 g.
