L'oignon (Allium cepa L.) est l'un des légumes les plus cultivés au Pakistan et un moyen de gagner des devises étrangères précieuses pour le pays. La détérioration microbienne de l'oignon est une cause majeure entraînant une perte après récolte chaque année. Dans la présente étude, un traitement par rayonnement gamma a été utilisé pour réduire la microflore pathogène de Allium cepa L. augmentant ainsi la durée de stockage après récolte. La principale variété d'oignon exportée du Pendjab (Desi Red) a été sélectionnée pour l'étude. Les bulbes d'oignon ont été irradiés à des doses de 0,05, 0,10 et 0,15 kGy à PARAS Foods, Lahore. Ensuite, la comparaison des populations microbiennes d'oignon a été faite entre les échantillons témoins et irradiés. L'impact de la dose de rayonnement sur la perte de poids et les qualités organoleptiques de l'oignon a également été évalué. Les résultats ont révélé que l'irradiation gamma affectait de manière significative la biosurdène, la perte de poids et les propriétés organoleptiques. Les bulbes d'oignon irradiés à la dose de 0,15 kGy ont montré une perte de poids minimale, une réduction de la charge microbienne et une préservation des qualités organoleptiques des oignons.
