Le chitosane est préparé à partir de carapace de crevettes en utilisant les méthodes de bio-conversion par rapport à la méthode de traitement chimique. Les propriétés physico-chimiques, le poids moléculaire, le degré de désacétylation, la teneur en cendres ainsi que le rendement du chitosane préparé indiquent que la bioconversion est une méthode bonne et durable pour l'isolement du chitosane. La chitine désacétylase, l'enzyme qui catalyse l'hydrolyse des groupes acétamido de N-acétyl glucosamine dans la chitine, a été purifiée à l'homogénéité de la bactérie Bacillus altitudinus et caractérisée en plus. La chitine désacétylase est active sur plusieurs substrats chitineux et dérivés de chitine. L'enzyme est inhibée par 1 mM Hg2,Fe2+, mais l'ajout de Mn2+ augmente légèrement l'activité de la chitinase. Lorsque la chitine colloïdale (un dérivé de chitine) a été utilisée comme substrat, la température optimale et le pH pour l'activité enzymatique ont été déterminés. La morphologie de surface du chitosane traité et de la masse moléculaire apparente de l'enzyme a été déterminée par microscope électronique à balayage (SEM) et électrophorèse sur gel de polyacrylamide de dodécyl sulfate de sodium (SDSPAGE) respectivement.
