Synopsis

In this study, we investigated the effect of total hydrogenation on the physical and chemical properties of certain oils: it alters the fatty acid composition and, consequently, the initial balance of the fatty acid composition of the oil to be hydrogenated. We conducted interesterification tests on certain blends and then combined the two processes by interesterifying fully hydrogenated oils; this combination yielded products that can serve as feed fat improvers or as substitutes for cocoa butter, which are high-value commercial products (comparable melting profile and low percentage of trans fatty acids).
