The Delmonico Cook Book features instructions for the setting up of a seasonal food providing restaurant, as well as recipes for stylish upscale dishes. A cookbook associated with, but not exclusively drawn from, the New York restaurant Delmonico with additional recipes from around the world. Delmonico's was opened by Italian-Swiss immigrants, the brothers Giovanni and Pietro Delmonico, and was widely recognized as America's first fine dining restaurant. This work includes menus for every day as well as simple recipes based on the author's professional restaurant career favourites. With an interesting articles and commentary on the relative strengths and weaknesses of American food markets as they compare to their European counterparts, especially with regard to beef. Written by Alessandro Filippini, who anglicized his name and operated professionally as "Alexander Filippini", a culinary expert and chef at Delmonico"s Restaurant in New York in the second half of the 1800s, and a cookbook author. He was instrumental in shaping American haute cuisine. In the original full cloth binding. Externally, sound with rubbing and light wear to the extremities. The odd mark to the board with light discolouration. Internally, firmly bound. Pages are very bright with the odd small spot and minor age toning to the extremities.
