Synopsis
A Certified Diabetes Educator, a nutritionist, and a bestselling cookbook author teamed up to create this huge book of delicious desserts that are suitable for a diabetic diet, yet scrumptious enough for the whole family to enjoy. In an introductory chapter, the authors cover all the basics of a diabetic diet and lifestyle, including exercise, carbohydrate counting, and food-exchange lists. Each recipe is accompanied by both nutrition facts and food exchanges. The book contains more than a thousand easy recipes for everything from Butterscotch Walnut Pie and Peanut Butter Cupcakes to Chocolate Caramel Blondies and Old Fashioned Apple Crisp. Don't be afraid to top off a meal with a slice of Double Coconut Cream Meringue Pie, or a very low carb Almond Cheesecake Square, or an old fashioned Soft Molasses Cookie...it's legal!
