The answers are supplied by New York Times correspondents and contributors, newsmen and women who really know their way around foreign lands. They recommend restaurants and tell why in reviews that are full of practical information, rich detail, revealing anecdote, and fascinating snippets of history and sociology. What's more, in almost all cases the reviewers have been able to obtain one or more recipes from the recommended restaurants, which means that readers of this book can savor chefs' specialties from around the world right in their own homes. Every recipe has been thoroughly tested and adapted, where necessary, to the American kitchen. You can start at the front of the book with Argentina, read about the Chaleco Colorado Restaurant in Buenos Aires and cook one of that establishment's specialties, carbonada criolla, a melange of steak, vegetables, and (yes) peaches. Then proceed all the way through the alphabet to Yugoslavia, investigate the Riblji Restoran in Dubrovnik and learn how to prepare its cold lobster salad with cucumber pickles. In between, make the acquaintance of restaurants in Quito, Kyoto, Katmandu, and Quebec, Lisbon, Leningrad, Lagos and London, Marrakesh and Mexico City, Paris and Peking, Palermo and Prague. All the correspondents were given the same instructions for selecting a restaurant. Basically, it was to be a place they ate in themselves, liked, and would recomend to a friend ~the kind of place where local people ate, a restaurant which, if it catered to tourists, would not be completely overrun by them. These are not necessarily the best restaurant in town in a standard guidebook sense, but rather places with authentic ambience, or haute cuisine, or typical peasant fare, or regional specialties, or one~of~a~kind dishes, or an unusual setting, or whatever, even in a few cases too few, alas ~ the lure of ridiculously low prices. The restaurant recommendations that came back were truly marvelous in their diversity, and so are the recipes. So now, spread before you on the pages of this book, is a feast ~ one you can enjoy in the restaurants around the world or cook yourself at home. Either way, "Bon appetit!" Lee Foster has worked for The New York Times virtually all his adult life, coming to the paper straight from wartime service as a lieutenant in the Navy. He has written editorials for the paper, edited foreign news for eight years, was a contributor to The Columbia Encyclopedia and an editor of The Times Byline Books on international affairs. He subsequently became Associate Editor of The Times Book Division and later Editor~in~Chief of The New York Times Encyclopedic Almanac. Currently he is Assistant Travel Editor of The Times and happily involved with what are still his two favorite subjects travel and food.
