Synopsis

Nutritional genomics, also referred to as nutrigenomics, is considered one of the next frontiers in the post-genomic era. Its fundamental premise is that while alterations in gene expression or epigenetic phenomena can subvert a healthy phenotype into manifesting chronic disease, through the introduction of certain nutrients, this process can be reversed or modified. GERALD RIMBACH is Professor of Food Science and Director of the Institute of Human Nutrition and Food Science, Christian Albrechts University, Kiel, Germany. Prior his appointment in Kiel, he worked at the University of California, Berkeley, and was Lecturer at the University of Reading, United Kingdom. Dr. Rimbach is a member of the German and British Nutrition Society and the Society of Nutrition Physiology (GfE) and is the vice-president of the German Society for Quality Research of Plant Food (DGQ). He is the author, coauthor or coeditor of over 100 journal articles and book chapters. Dr. Rimbach received the M.Sc. and Ph.D. degrees from the University Giessen, Germany.

JURGEN FUCHS is Professor, Department of Dermatology, Johann Wolfgang Goethe-Universitat, Frankfurt, Germany. The author of approximately 250 published articles and is a co-editor. He received the Ph.D. (1985) and M.D. (1986) degrees from the University of Frankfurt, Germany.

LESTER PACKER is Adjunct Professor of Molecular Pharmacology and Toxicology, University of Southern California School of Pharmacy, Los Angeles. He is the author, coauthor, or coeditor of over 800 journal articles and book chapters, and many books
