This article deals with the kinds of food the Chinese ate in California prior to the 1849 gold rush. Eventually the Chinese explored and found ample "native" Chinese food in California, including seaweed in Monterey, as well as other unusual examples in other parts of Northern California which became common Chinese foods. . An obscure article, seldom found complete in two parts. . * Key aspects of Chinese food habits in the 19th century, as described by Spier: Dietary Staples: A typical Chinese meal included rice, soup, and several side dishes. Fresh Ingredients: There was a high emphasis on fresh, seasonal produce and vegetables. Variety of Foods: The diet incorporated a wide range of items, including dried oysters, abalone, cuttlefish, bamboo sprouts, mushrooms, pork, poultry, vermicelli, Chinese bacon, peanut oil, and various dried fruits. Use of Tea: Tea was consumed extensively, rather than water, a practice noted by Spier to have potentially significant health implications. Communal Dining: Meals were often prepared and shared within the group, with expenses for food being a shared cost. Cultivation of Food: Chinese communities cultivated their own terrace gardens to grow herbs, spices, and vegetables.
