John Applegreen's handy reference intended for professional bartenders in hotel and catering services. Applegreen worked as head bartender for H. M. Kinsley's, Chicago's top restaurant in the 1890s before penning this reference guide. A no-nonsense guide with the author proclaiming strict rules and instructions in the introduction. Sections are divided by type of cocktail for instance, "Fizzies" and even no-alcohol "Temperance Drinks" that includes a basic recipe for lemonade; scarce in any edition.
