Jean Grimaud (1750-89), professor at the Medical University of Montpellier, appears to have written three substantial medical works in his short lifetime, a two-volume treatise on nutrition (1787-89, the present work), a four-volume treatise on fevers (posthumous, 1791; second edition, 1815), and a two-volume complete course of physiology (posthumous, 1818). Grimaud's work on nutrition derives from a proposed detailed question on the subject issued by the Imperial Academy of Sciences, St. Petersburg. In response he considers, with numerous references to the literature, the physiology of nourishment and growth. Concerning nutrition, Grimaud divides the subject into two parts, the interior and exterior effects on the organism. The role of the blood, blood vessels, and lymphatics is emphasized. The supplementary second memoir contains a detailed historical development of the subject. The National Library of Medicine lists the two volumes separately (18th C., p.186), while the Wellcome Library has only the 1787 volume (vol. III, p.167).
