Green cloth with gold spine titles, xxii, , 298pp, index. Full page B&W photos mostly of prepared dishes; B&W menu andfacsimile of lnote from Escoffier; B&W drawings of fish and seafood. These recipes were the work of Madame Prunier's father, Emile who died before he could publish a book based on his 25 years of research. The material was given to a collabortor, M. Michel Bouzy who published the book in France in 1929 (LES POISSONS, CRUSTACES ET COQUILLAGES, on which this present book is founded. There are 1000 recipes for all kinds of fish dishes which has made the restaurant name of PRUNIER famous in London and in Paris. The cooking sections starts of with a chapter on savoury butters and sauces, "the most important chapter in the book", and proceeds in an orderly quintessentially French manner to Soups, Fresh-water, and then Salt-water Fish, Shellfish, Turtles, Frogs, Snails, Some Prunier Specialties, and wine notes. The translation was done by Heath who as usual does a good job. (1.8 JM HOQ 101/4 Size: 8vo - over 7¾" - 9¾".

A translation of Madame Prunier's Fish Cookery book, providing advice on buying fish, elementary rules for cooking fish, how to prepare fish, and complimentary butters and sauces. Includes recipes arranged by fish: fresh-water, salt-water and shellfish, as well as turtle recipes, frog recipes, and snail recipes. Simone Prunier, known as Madam Prunier, was a French restaurateur and food writer who established a well-known French restaurant in London. La Maison Prunier, a Paris restaurant founded by her grandfather Alfred Prunier which was later passed down to her father and then herself, became famous for the fresh fish and shellfish that was delivered daily by train from the sea, a novelty at the time. Madame Prunier later went on to open the Prunier St James's restaurant in London. Selected, translated and edited, with an introduction and notes by Ambrose Heath, an English journalist and food writer. In the original full cloth binding. Externally, very smart with minor bumping to the extremities and a small mark to the front board. Light fading to the spine. Internally, firmly bound. Pages are very bright and clean throughout. Previous owner's bookplate to the front endpaper. Very Good Indeed. book.

Simone Prunier (1904-1976), known as Madam Prunier, was a French restaurateur and food writer who established a well-known French restaurant in London. The recipes in this book were the work of Madame Prunier's father, Emile, who died before he could publish a book based on his 25 years of research. The material was given to a collaborator, M. Michel Bouzy, who published the book in France in 1929 under the title 'Les Poissons, Coquillages, Crustacés et leur Preparation Culinaire', on which this present book is founded. There are numerous recipes for all kinds of fish dishes which made the restaurant name of Prunier famous in London and in Paris. The book is bound in the original light blue cloth covered boards with titling against a dark blue background on the spine and a dark blue illustration of a fish on the front board. The case of the book is in very good condition with light bumping and a touch of fading to the spine ends. The contents are tight and clean with partial browning to the free endpapers and a name has been written on the front free endpaper. A label regarding sponsorship of the book has been pasted onto the front fixed endpaper (Violet The Lady Melchett, The Hon. Mrs. Malcolm Bowes-Lyon and Colonel The Hon. Angus McDonnell). The unclipped dustwrapper has shelf wear with some soiling and the spine is noticeably browned with some staining. About 1/4" is missing from the top of the spine and bottom corners of the spine and about 1/8" from the rest of the bottom of the spine. There is a small hole on both edges of the spine. The top edge is rubbed with a tear of about 1/2" on the top front edge and the bottom rear spine corner has a tear of about 3/4".
