However, with qualities such as a lower melting point, resulting in faster dissolution in the mouth and absence of residual 'chewy' mouth feel has affected its commercial applications. Fish gelatin is acceptable for Islam, and can be used with minimal restrictions in Judaism and Hinduism. Furthermore, fish skin, which is a major byproduct of the fish-processing industry, could provide a valuable source of gelatin.
