Harvesting with proper maturity (specific gravity more than 1.00) affects post harvest life of fruit. CFB boxes followed by CTHT box were successfully helped to increase the shelf life and quality of fruits. Attractive packaging and careful handling is necessary to reduce the post harvest losses. Pre-cooling by the method by hydro-cooling increased significantly the shelf life of mango fruits without affecting the quality of fruit.Low temperature storage helped to increase the availability of fruits. But chemical changes in fruits were very slow, which reduces its ripening and overall fruit quality. The products prepared from raw and ripe mango fruits revealed good at preparation and throughout the storage period of six months. On the basis of their organoleptic evaluation, it is noticed that they retained their conditions and acceptability during storage period of six months at ambient temperature condition, so there is a scope for processing of Ratna variety.…
